Protein Pancakes

It’s safe to say that most of us probably aren’t getting enough protein in each day. Protein is a key macro nutrient for balancing blood sugar, building muscle and reaching weight loss goals. I could go on about the benefits of getting enough protein in but I will write a post dedicated to that later. For now I am going to share an easy recipe that is perfect if you are trying to get in more protein but want something sweet for breakfast.

All you need for these pancakes are cottage cheese, eggs, flour, baking powder, salt milk and maple syrup. No protein powder required. Add all ingredients to a blender and blend until smooth. Preheat a vast iron skillet and then add butter. Pour in pancake batter and cook for about 3 minutes on each side. Look for bubbles and the pancake to release easily before flipping. Top with your favorite toppings such as fresh fruit, nuts etc. and maple syrup. This recipe makes 4 pancakes which is two servings. Store any extra in the fridge and reheat in the toaster.
